De la Creme creates an environment for cake education and empowerment. We take the time to learn your needs, sharing our proven pathways for growth when learning new skills and nurturing existing skills towards mastery.

 

Private classes are tailor-made to suit you perfectly allowing you to get the most from your investment.

 

Private classes can be scheduled Sundays thru Wednesdays (exceptions apply during off season). Please inquire for available dates. Two-day classes are recommended to allow for dry time on more detailed projects (especially sugar flowers) but we will know how to best structure your class once session details have been decided, but be sure to let us know your preference when inquiring.

Cake Photography Masterclass

Elevate your photography skills with techniques designed specifically for cake photography. Learn the fundamentals of natural light photography developed by Heidi Moore Holmon, tailored towards capturing scroll-stopping cake photos. With a focus on both getting the picture-perfect shot and editing photos in post-production for a professional look, you will walk away from this class with the skills needed to showcase your sweet works of art in a way that makes them look as good as they taste.

Who is This Class For?

This class is a good fit for students with some experience photographing their own work, but ambitious beginner students will also be able to quickly grasp the method that Heidi teaches. For professionals wanting to elevate their cake photography skills, this class will flip your natural approach on its head, changing the way you shoot and edit cake shots. A smart phone or DSLR camera (with basic understanding of settings) is a requirement for this class, and a laptop is highly recommended for the editing session.

Peony Rose Deep Dive Masterclass

Working with gum paste, spend three days diving deep into the intricacies and nuances of sugar peonies and roses—two of the most popular wedding flowers. Explore a variety of methods to create sugar flowers with a natural, realistic appearance full of movement, as well as coordinating foliage and botanicals. Learn the step-by-step techniques as well as the theory behind making design decisions.

Elevate your sugar flower skills and gain the confidence to attract your ideal client surrounded by supportive fellow cake artists. Walk away from this class with not only the skills to recreate exquisite sugar flowers, but the knowledge on how to adapt the techniques to suit your own need across other sugar blooms.

Who is This Class For?

This class is for experienced wedding cake artists and hobby cakers passionate about mastering sugar flowers for both realistic and artistic effect. Previous experience working with gum paste is advised but enthusiastic beginners are also welcome.

What You Will Learn

  • Compiling inspiration and resources guides

  • Deconstructing flowers to learn composition and structure

  • Tinting gum-paste and adding color for a realism

  • Creating multi-wired flowers with lots of movement

  • Creating stable anchor buds for single-wired flowers

  • Petal Drying Techniques for natural movement

  • Gum-paste Roses
